1. 先將和牛頰煎一下,加入紅酒、胡蘿蔔、芹菜、紅洋蔥。Sear the wagyu beef cheek, and then add red wine, carrot, celery and red onion.
2. 在120攝氏度下煮和牛頰5個小時,然後加入根芹醬。 Cook the wagyu beef for 5 hours at 120°C, then reduce and blend the celeriac sauce.
3. 用沸水焯熟蔬菜,最後全部放入盤中。Blanch the vegetable and put them together on the plate.
